Wellness Wednesdays: Meet Elizabeth from Vancouver With Love

This week, we are so excited to have Elizabeth Emery from Vancouver With Love as our Wellness Wednesday guest! Elizabeth’s Instagram and blog has gained a large and loyal legion of followers who look forward to her delicious plant-based recipes!

Tell us about yourself!
I’m a vegan food blogger (Vancouver With Love) and recipe developer based in Vancouver BC (but originally from the UK). Food is one of my passions! And helping people make the switch to plant-based living by sharing recipes and tips is something I absolutely love.

What made you move to Vancouver from the UK?
Adventure! My boyfriend and I both wanted to travel more and explore other countries, and realised it wasn’t likely to happen with our jobs. So on a whim we decided to apply for working holiday visas for Canada. 7.5 years later, we’re permanent residents and hoping to apply for citizenship soon! Much as I miss home (the UK will always be ‘home’ to me), I feel so fortunate to live in a city where veganism is celebrated, and where new plant-based products and restaurants are constantly appearing. It’s quite something to see when you come from a small place in the UK that used to have one vegetarian restaurant!

You have shared that you switched from a vegetarian diet to a vegan diet. What made you decide to switch?
I was vegetarian from a very young age because I didn’t want to harm animals. As I grew up, I started to feel a bit hypocritical as I realised that animals were still being exploited to produce products like eggs and dairy that I ate regularly. I also (naively, I guess) hadn’t realised that virtually all animals are sent to slaughter anyway once their producing days are over – once I realised this, there was no way I could continue to support it. It’s been over 8 years now and I have no regrets!

When did you discover your love for cooking?
I think growing up, as both my parents always cooked by feel. That said, I had a very boring palette until my mid-twenties – I used to rely largely on bread and potatoes (so British!) and rarely ventured as far as the colourful buddha bowls I constantly make these days!

What is your go-to easy plant-based meal?
Probably a smoothie! Or avocado toast. (I know I’m a bit behind the times there but oh my goodness – avo toast is gold!)

If you’re going all out- what does your dinner look like?
A British-style roast dinner! Vegan nut roast (or nut loaf), roast potatoes, veggies and gravy. It’s the most delicious meal in the world. 🙂 And for dessert, a Black Forest Gateau with whipped coconut cream.

What is your favourite smoothie combination?
It would have to be banana, cacao, walnut, sesame, nut milk and dates. For every day, I usually have something much greener – berries, kale, cauliflower, dates, and zucchini is surprisingly delicious!

What does wellness mean to you?
Balance. Doing everything in moderation, whether that relates to eating, exercising or working. (The working part is something I’m still very much learning!)

What is your life mantra?
Nothing is worth worrying about. (Again, one that’s a work in progress for me!)
